Besides getting more university degrees, what is the best way to communicate knowledge and interest in AI/ML product work in this job market?

Training and Certs are definitely where you can showcase your interest. I think IBM and AWS have good certs you can look at

I’d put more stock in repositories that track any project or side-projects you’ve done. That would communicate both interest and understanding of topics in the space. Certificates are a commodity and only matter if your interviewer is aware of the subject matter in the course, which they likely haven’t.

Don't. You are chasing the latest trend. Anyone that actually knows AI/ML has a deep knowledge for math and didn't short change themselves. Choose a different area that's a passion

Solve a problem using AI/ML. Even better if you build a useful and somewhat original solution (and not a cookiecutter project like digit classification).

Look upDeeplearning.ai They have a lot of great specializations most are delivered through Coursera Fast.ai is another great option
